My love for banana bread began during my time in Singapore. After every yoga class, I would rush to a small kiosk in Bugis Mall to grab a slice. Now that I live in California, there are days when I suddenly crave it out of nowhere. One day, I decided to bake my own banana bread, but it was an epic fail! I couldn't stop laughing at all my failed attempts; I was just terrible in the kitchen. But I didn't give up and kept practicing until I finally perfected the craft. However, my love for banana muffins grew stronger, and I eventually achieved perfection with my Treban Muffins Recipe - also thanks to my wonderful husband who made it all happen. I am proud to say that I will one day leave a legacy for my children with my Treban Muffins. They will miss them, and I will be able to bestow the holy grail of banana muffin-making upon them. "Treban" also stands for Three Bananas making it easier to remember the recipe for my kids one day, ahahaa.
Banana muffins are easy to bake because the ingredients are simple and the recipe is straightforward. Additionally, bananas are a versatile and forgiving ingredient, making it easy to adjust the recipe to your liking.
You will need the following tools and ingredients:

- Large bowl
- Wooden Spoon
- Oven
Ingredients:
- 3 ripe bananas, mashed
- 5 tbsp butter, melted
- 1/4 cup brown sugar
- 1 egg, beaten
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1 1/2 cups whole wheat flour
- almonds, crushed (optional)
- dark chocolate chips (optional)
- blueberries (optional)
Directions:
- Preheat your oven to 350 degrees F.
- Take a large bowl and mix mashed bananas with melted butter. Add sugar, egg, and vanilla. Stir well.
- Sprinkle baking soda, baking powder, and salt. Stir again.
- Add flour and stir until no longer powdery. You can add the chocolate chips or crushed almonds or do it last as I do. BONUS TIP: Brush your muffin pan with olive oil, so you don't need to use baking cups.
- Pour the batter into the muffin pan without overflowing, as it will expand. Top it off with dark chocolate chips, or crushed almonds. To add variety, I enjoy sprinkling half of the pan with chocolate and the other half with almonds.
- Bake for 20 minutes. Bake for 40 - 50 minutes for banana bread, depending on your oven. Allow it to cool inside the oven for 10 minutes before safely removing it.
